Coconut Apricot Balls (Print Version)

# Ingredients:

01 - 208 g sweetened condensed milk
02 - Powdered sugar for rolling, if you'd like
03 - 170 g dried apricots (about 1 1/2 cups)
04 - 288 g plain shredded coconut, divided
05 - 120 g finely chopped walnuts

# Instructions:

01 - Put down some wax or parchment paper on a baking sheet and keep it nearby.
02 - Toss the apricots, 2 cups of coconut, walnuts, and condensed milk into a food processor. Blend for 30 to 60 seconds until everything's combined.
03 - Make little 1-inch-sized balls from the mixture and roll them in the rest of the shredded coconut. Want something different? Use powdered sugar instead.
04 - Eat them right away or pop them into a sealed container in the fridge. They'll last up to a week.

# Notes:

01 - These apricot bites aren’t great for freezing—they lose their chewy texture when thawed. If you're making them for a party, try to prep 1-2 days before.
02 - You can easily double the batch. Just roll the mixture into balls right away since it dries out if left sitting.
