Put down some wax or parchment paper on a baking sheet and keep it nearby.

Toss the apricots, 2 cups of coconut, walnuts, and condensed milk into a food processor. Blend for 30 to 60 seconds until everything's combined.

Make little 1-inch-sized balls from the mixture and roll them in the rest of the shredded coconut. Want something different? Use powdered sugar instead.
