Slice the avocado, tomato, and mozzarella cheese. If you're using basil or balsamic glaze, have them ready.

Spread a thin layer of butter on one side of each slice of bread. This will help the bread get golden brown and crispy while grilling.

On the unbuttered side of one slice of bread, layer slices of mozzarella, followed by tomato slices, and then avocado slices. Sprinkle with a little salt and pepper to taste. Top with the second slice of bread, buttered side facing out.

Heat a non-stick skillet or griddle over medium heat. Place the sandwich in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted. Press down gently with a spatula for an even grill.

Once both sides are crispy and the cheese has melted, remove from the skillet and slice the sandwich in half. Optionally, drizzle with balsamic glaze or add fresh basil leaves for extra flavor.
