Easy Air Fryer Banana Donuts (Print Version)

# Ingredients:

01 - Avocado oil spray, for the dough and the fryer basket

→ Dough Handling

02 - 10–15 ml melted coconut oil, add more if the dough gets sticky (2–3 teaspoons, use sparingly)

→ Coating

03 - 2 g ground cinnamon (about half a teaspoon)
04 - 50 g white sugar (a quarter cup)
05 - 30 ml coconut oil, melted (use vegan butter, melted, if you like, about 2 tablespoons)

→ Dough

06 - 1 big, ripe banana (mash it up, you want 120 ml or about half a cup of purée)
07 - 90 g self-rising flour (three-quarters of a cup)

# Instructions:

01 - These taste awesome warm, so grab one while they're fresh out of the fryer.
02 - Once they're still hot, brush donut holes with melted coconut oil. Roll 'em in your cinnamon-sugar mix so they get totally covered.
03 - Set your air fryer to 180°C (350°F). Pop the dough balls in and cook for 6 or 7 minutes. You're looking for golden, puffy donut holes that aren't sticky.
04 - Give your air fryer basket a spritz of avocado oil. Space the dough balls out, leave about an inch (3 cm) so they don't get stuck together.
05 - Grease your hands up with coconut oil. Scoop a tablespoon of dough and roll it into a ball. Put each one on a plate lined with parchment paper. Spray 'em lightly with avocado oil before cooking.
06 - Slick your hands with melted coconut oil. Knead everything together in your bowl till it turns into a sticky lump you can shape. Don't use more flour unless you must, and if it's too wet, sprinkle up to three teaspoons over it—just enough.
07 - Put your banana mash in a bowl, then add the self-rising flour. Use a spatula to gently stir until clumps form.
08 - Take your banana and mash it up really well until it’s all smooth and measures about 120 ml, which is half a cup.

# Notes:

01 - Don't dump in extra flour or your donut holes won't be soft and fluffy. Just keep oiling your hands and the table if things get sticky.
02 - These are tastiest day of, but if there's any left, pop them in a sealed container at room temp. They'll keep a couple days.
