Basil Pasta Chicken (Print Version)

# Ingredients:

→ Chicken with Balsamic Flavor

01 - 1 teaspoon of honey
02 - 1 lb boneless, skinless chicken breasts
03 - 2 tbsp of balsamic vinegar
04 - 1 tbsp of pesto
05 - Kosher salt and black pepper, as much as you like
06 - A little sprinkle of red pepper flakes

→ Pasta with Tomato and Basil

07 - 3 tbsp Parmesan cheese, grated
08 - 1/8 tsp crushed red pepper flakes
09 - Salt and pepper, season to taste
10 - 2 tbsp of good-quality olive oil
11 - 12 oz of uncooked pasta, gluten-free option if needed
12 - Balsamic glaze and chopped basil for garnishing (can skip)
13 - 2 small garlic cloves, finely chopped or minced
14 - 2 tbsp fresh basil, roughly chopped
15 - 2 cups cherry tomatoes, sliced in half

# Instructions:

01 - In a zip-top bag, add chicken breasts and all marinade ingredients. Squeeze air out, seal tightly, and squish everything around so the chicken is well-coated. Set in the fridge for at least an hour or leave overnight.
02 - Set your grill to about 400°F. Grease the grates lightly with oil. Place the chicken on and grill for 7-8 minutes on one side. Flip it over and let it cook for another 6-8 minutes, depending on thickness. When the inside temp reaches 165°F, take it off. Leave it untouched for 5 minutes before slicing.
03 - Follow the instructions on your pasta package to cook it right. Save half a cup of the pasta water before draining everything. Keep the noodles aside after that.
04 - Put your pan back over medium heat. Pour in the olive oil and make sure it covers the bottom by giving it a little swirl. Toss in the garlic and stir around for half a minute. Next, add your tomatoes, salt, pepper, and red chili flakes. Cook while stirring until the tomatoes soften up and their juices seep out.
05 - Add those chopped basil leaves into the tomato mixture and give it a stir. Then, put the pasta back in along with a little of the starchy water you saved. Toss it all together. Add more water if needed to make it saucier.
06 - Slice up the grilled chicken and place it over the pasta. Sprinkle on the grated Parmesan, a drizzle of balsamic glaze, and some extra fresh basil if you want.
