BBQ Chicken Honey Rice (Print Version)

# Ingredients:

→ Protein

01 - 1 lb chicken breasts or thighs, no skin or bones

→ Grains

02 - 1 cup white, long-grain rice

→ Liquids

03 - 2 cups of broth, chicken-flavored

→ Sauces

04 - 1/4 cup honey
05 - 1/2 cup barbecue sauce

→ Spices

06 - 1/2 teaspoon smoked paprika
07 - 1 teaspoon powder made from garlic
08 - Salt and pepper as needed
09 - 1 teaspoon onion powder

→ Vegetables

10 - 1 cup veggies, fresh or frozen, mixed together

→ Garnish

11 - Parsley or green onions, all chopped up

# Instructions:

01 - Warm a big pan over medium heat, drizzling in a little oil. Sprinkle both sides of the chicken with paprika, onion powder, garlic powder, salt, and pepper. Let it brown for 3 to 4 minutes on each side. Take it out after searing and leave it aside.
02 - Toss uncooked rice into the same pan and stir it around for a minute or two to toast. Stir in the BBQ sauce, honey, and the chicken broth after.
03 - Put the browned chicken back into the rice mixture. Cover the pan and bring it to a low boil, then reduce the heat to the lowest setting. Simmer it all for about 15 minutes.
04 - Sprinkle the vegetables over the rice after 15 minutes. Cover it up again and keep cooking for another five minutes until the chicken's fully done (internal temp 165°F or 74°C) and the rice is soft.
05 - Take the pan off the burner, let it sit for five minutes, then fluff up the rice with a fork. Sprinkle over chopped parsley or green onions and dish it out while hot!

# Notes:

01 - Stick to long-grain rice—short-grain can get mushy here.
02 - Make it more or less sweet by adjusting the honey amount.
03 - For a smoky kick, grab a BBQ sauce with mesquite or hickory flavor.
04 - Switch out the meat—shrimp, tofu, or beef work too!
