Spinach Bean Artichoke (Print Version)

# Ingredients:

01 - 1 can (15 oz) of cannellini beans, rinsed and drained
02 - 1 can (15 oz) of garbanzo beans, rinsed and drained
03 - 1 15 oz can of artichoke hearts, chopped and drained
04 - 1 cup of finely chopped spinach
05 - 1/3 cup of sliced green onions
06 - 1/2 cup of plain Greek yogurt
07 - 1/4 cup of mayo
08 - 1/2 cup of shredded parmesan cheese
09 - 1 clove of minced garlic
10 - 1 teaspoon of Italian herb blend
11 - 1/2 teaspoon of finely grated lemon rind
12 - 1/2 teaspoon of salt

# Instructions:

01 - Toss together the spinach, artichokes, both bean types, and the green onions in a big mixing bowl.
02 - Stir mayonnaise, yogurt, cheese, lemon zest, Italian herbs, garlic, and salt in a smaller bowl. Adjust thickness with a tablespoon of water, then mix until silky.
03 - Drizzle the creamy dressing over the veggies and beans. Stir everything together evenly.
04 - Store in a sealed container in the fridge for no more than 7 days.

01 - Great for weeknight meals and can stay fresh in the fridge for up to seven days.
