Beef Burritos with Fries (Print Version)

# Ingredients:

→ Filling

01 - 1 cup shredded Monterey Jack cheese
02 - 1 cup shredded cheddar cheese
03 - ½ cup salsa
04 - ½ tsp black pepper
05 - ½ tsp salt
06 - 1 tsp smoked paprika
07 - 1 tsp cumin
08 - 1 tsp chili powder
09 - 2 cloves garlic, minced
10 - 1 small onion, diced
11 - 1 tbsp olive oil
12 - 500g ground beef

→ Assembly

13 - ¼ cup chopped cilantro (optional)
14 - ½ cup diced tomatoes
15 - ½ cup chopped lettuce
16 - ½ cup sour cream
17 - 6 large flour tortillas

→ Fries

18 - ½ tsp pepper
19 - ½ tsp salt
20 - 2 tbsp olive oil
21 - 1 tsp paprika
22 - 1 tsp garlic powder
23 - 4 medium russet potatoes

# Instructions:

01 - Give the potatoes a good wash and peel if you’d like. Slice them into fry shapes as evenly as you can. Dunk them in cold water for half an hour to get rid of some starch.
02 - Get your oven heated to 220°C, or warm up some oil in a fryer to 190°C. Dry the potatoes and toss them with olive oil, garlic powder, paprika, salt, and pepper. Spread them out on a baking sheet to bake for 25–30 minutes, flipping them once. Or fry in small amounts till they’re crispy and brown.
03 - Pop some olive oil in a pan over medium heat. Cook the onion till it’s soft, then stir in the garlic for about a minute. Add the ground beef, break it apart, and let it brown. Drain off the grease. Stir in the chili powder, smoked paprika, cumin, salt, and pepper. Pour in salsa, let it simmer for 5 minutes.
04 - Heat up the tortillas so they’re flexible. Spread some sour cream down the center. Pile on the beef mix, Monterey Jack cheese, cheddar, lettuce, tomatoes, and add cilantro if you like. Fold the sides in and roll it all up tightly.
05 - Pair the burritos with fries on the side. You could add extras like guac, jalapeños, or more cheese. Fries go great with ketchup or your favorite dip!
