Toss the cheddar on top of everything in the pan. Put the lid on and wait a minute for the cheese to melt. Finish things off with some cilantro right before you serve.

Dump the beef mixture back into the skillet, right onto the sweet potato and veggie stuff. Stir it all around to get things good and mixed.

Throw the sweet potatoes, diced tomatoes, green chiles, water, plus the last 2 teaspoons of chili powder and 1 teaspoon cumin in the skillet. Add salt and pepper, stir it all, slap the lid on, turn the heat down, and let it cook for about 20 minutes till sweet potatoes are soft.

Pop in the grated garlic, let it cook just for a minute, then scoop out the beef mix onto a plate. Go ahead and give the skillet a wipe before moving on.

Get your pan hot over medium-high with that olive oil. Drop in the onion and ground beef. Use a wooden spoon to break up the meat, season with 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Let everything cook through till the beef is almost done.
