Southwest Ground Beef Sweet Potato (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1/4 cup water
02 - 450 grams lean ground beef
03 - 410 grams canned fire-roasted diced tomatoes
04 - 2 cups peeled and diced sweet potatoes
05 - 1 tablespoon olive oil
06 - 1/2 cup diced onion
07 - 113 grams canned diced green chiles

→ Seasonings

08 - 1 teaspoon grated garlic
09 - 2 teaspoons ground cumin
10 - 5 teaspoons chili powder, divided
11 - Kosher salt and fresh black pepper to taste

→ Toppings

12 - Fresh chopped cilantro to sprinkle on top (optional)
13 - 1/2 cup shredded cheddar cheese

# Instructions:

01 - Toss the cheddar on top of everything in the pan. Put the lid on and wait a minute for the cheese to melt. Finish things off with some cilantro right before you serve.
02 - Dump the beef mixture back into the skillet, right onto the sweet potato and veggie stuff. Stir it all around to get things good and mixed.
03 - Throw the sweet potatoes, diced tomatoes, green chiles, water, plus the last 2 teaspoons of chili powder and 1 teaspoon cumin in the skillet. Add salt and pepper, stir it all, slap the lid on, turn the heat down, and let it cook for about 20 minutes till sweet potatoes are soft.
04 - Pop in the grated garlic, let it cook just for a minute, then scoop out the beef mix onto a plate. Go ahead and give the skillet a wipe before moving on.
05 - Get your pan hot over medium-high with that olive oil. Drop in the onion and ground beef. Use a wooden spoon to break up the meat, season with 3 teaspoons chili powder, 1 teaspoon cumin, salt, and pepper. Let everything cook through till the beef is almost done.

# Notes:

01 - Slice all your sweet potatoes roughly the same so they cook right. Grab lean beef so you don't end up with a greasy mess.
