Blackened Cajun Chicken Alfredo Recipe (Print Version)

# Ingredients:

→ Pasta

01 - 1 lb. Mafaldine noodles (or fettuccini/linguini noodles)
02 - 4 tablespoons olive oil
03 - 6 tablespoons butter
04 - 6-8 cloves garlic, minced
05 - 2 cups heavy whipping cream
06 - 1.5 cups shredded parmesan cheese

→ Chicken

07 - 3 chicken breasts
08 - 4 tablespoons blackened seasoning, divided (recipe below)
09 - Salt and pepper

→ Blackened Seasoning

10 - 2 tablespoons smoked paprika (regular paprika works too)
11 - 1 tablespoon cayenne pepper
12 - 1 tablespoon onion powder
13 - 2 teaspoons garlic powder
14 - 1 teaspoon ground black pepper
15 - 1 teaspoon salt
16 - 1/2 teaspoon dried thyme
17 - 1/2 teaspoon dried oregano

# Instructions:

01 - Pound chicken to an even 1/4 inch thickness, rub with oil, and season liberally with blackened seasoning. Cook in a skillet until dark amber coloring, then set aside to rest.
02 - Melt butter in the skillet, sauté garlic, and stir in heavy cream and blackened seasoning. Simmer until thickened.
03 - Cook noodles to al dente, reserving 1/3 cup of pasta water. Stir pasta water and parmesan cheese into the Alfredo sauce, then combine cooked pasta and chicken.
04 - Serve hot, garnished with additional Cajun seasoning. Enjoy with garlic bread, Texas toast, or garlic knots.
