Marry Me Butter Beans (Print Version)

# Ingredients:

01 - 3 garlic cloves, finely chopped
02 - 2/3 cup sundried tomatoes soaked in oil, chopped small
03 - 2 cans of rinsed butter beans or white cannellini beans (14oz/398ml each)
04 - 1 cup of tiny tomato halves
05 - 2 tablespoons olive oil (feel free to use sundried tomato oil for extra taste)
06 - 1 1/4 cups mozzarella, shredded
07 - 1 shallot, chopped finely (or 1/4 cup finely diced onion)
08 - 1/2 teaspoon salt
09 - 1 1/2 teaspoons oregano (dried)
10 - 1/4 teaspoon red chili flakes
11 - 1/2 cup chicken or veggie broth, plus more if needed
12 - 1 cup of spinach leaves or kale, chopped small
13 - 1/4 cup parmesan cheese, grated
14 - 1 cup milk, full fat or normal
15 - Extras for topping: a little grated parmesan, some chili flakes, or a few leaves of fresh parsley or basil
16 - Optional: another 1/2 cup of chicken or veggie broth for a thinner consistency

# Instructions:

01 - Warm up olive oil in a deep frying pan over medium heat. Sprinkle the chopped shallots with some salt and pepper, and cook them until they soften, roughly 3-5 minutes.
02 - Stir in your sundried and fresh tomatoes. Let them cook for 2-3 minutes, stirring occasionally.
03 - Toss in garlic, oregano, red chili flakes, along with some salt and pepper. Let this cook for around 60 seconds, just until it smells amazing.
04 - Add your milk and the 1/2 cup broth into the pan. Scrape the bottom gently with a spoon to mix in any browned bits. Bring it to a gentle simmer, toss in the beans, lower the heat, and cover the pan partially. Let it cook while stirring for about 5-7 minutes so the beans soak in all that flavor.
05 - Want it saucier? Stir in up to 1/2 cup of extra broth, cooking for an extra couple of minutes to mix it all in.
06 - Turn the heat down and stir in your spinach and parmesan. Keep cooking for another 1-2 minutes until the greens soften. Tweak the seasoning if you need to, then take it off the heat.
07 - Sprinkle the shredded mozzarella evenly over the skillet’s contents. Put it under the broiler and let it go for 3-5 minutes, just until the cheesy top turns golden and bubbly.
08 - Dish it out while it’s still hot. Garnish with basil, a sprinkle of chili flakes, and extra parmesan. Pair it with crusty bread if you’d like.

# Notes:

01 - Can’t find butter beans? Swap with cannellini or smaller navy beans.
02 - Works great with pasta, rice, or quinoa. You can even eat it as a meal by itself.
03 - Tastes best when fresh, but leftovers can be stored in a sealed container in the fridge for 1-2 days. Reheat on low and add a splash of broth if needed.
