01 -
Set your oven temperature to 350°F/180°C (fan at 160°C). Cover a large baking tray with parchment paper and set it aside.
02 -
Grab a mixing bowl and toss in cream cheese, egg yolk, powdered sugar, lemon, vanilla, and salt. Mix everything together until smooth. Use a whisk or flexible spatula to make it easier.
03 -
Roll out the puff pastry into a 12x12-inch sheet using a rolling pin to keep it even.
04 -
Cut the pastry into 9 equal pieces (4x4 inches each) using a pizza cutter or sharp knife. Take the corners of each square, fold them about an inch inward, and press lightly to hold in place.
05 -
Scoop about a tablespoon of the cream cheese mixture into the center of every pastry square. A small cookie scoop works great for this.
06 -
In a tiny bowl, blend the egg with water. Brush the mix lightly around the edges of the pastries using your pastry brush.
07 -
Pop the tray in the oven and bake for around 16-18 minutes. Make sure to turn the pan halfway through baking. Once golden brown, pull them out and leave them to cool off completely before adding your icing.
08 -
Use a bowl to stir powdered sugar, milk, and vanilla extract together. Add the milk little by little till it's as thick or thin as you'd like.
09 -
After the pastries have cooled, drizzle your glaze generously over each one. Then, they're ready to enjoy!
