Steak and Potatoes (Print Version)

# Ingredients:

01 - 1 lb sirloin steak, chopped into small cubes (about 1/2 inch)
02 - 1 lb of Yukon gold potatoes, diced into half-inch pieces
03 - 1/4 cup butter or ghee, split into two portions
04 - 1 tablespoon of olive oil
05 - 3 cloves of garlic, finely chopped
06 - 1 teaspoon of thyme (dried)
07 - 1/2 teaspoon sea salt, and extra if needed
08 - 1/2 teaspoon of oregano (dried)
09 - 1/4 teaspoon crushed black pepper, more if necessary

# Instructions:

01 - Warm up a big cast iron pan over medium heat. Add the olive oil, then melt 2 tablespoons of butter or ghee in it.
02 - Toss the potatoes into the melted ghee and sprinkle them with garlic, oregano, thyme, salt, and pepper. Let them cook without stirring for about 2 minutes. Stir occasionally and cook until they’re soft and golden, roughly 8-10 minutes. Remove the potatoes and anything browned from the pan, then set aside.
03 - Turn the heat up a bit to medium-high and throw in the rest of the ghee. Once it’s melted, add the steak chunks and sprinkle with salt and black pepper. Let them sit untouched for a couple of minutes to brown, then stir and cook for 1-2 more minutes until nicely golden.
04 - Return the potatoes to the pan and stir to mix. Add more salt and pepper if you think it needs it. Sprinkle some fresh parsley on top, dish it out, and enjoy!

# Notes:

01 - Feel free to swap Yukon gold potatoes for small potatoes like red, yellow, or fingerling.
02 - Make sure the potato pieces are evenly sized so they’ll cook at the same speed.
03 - Let the steak sit untouched while it sears to lock in flavor and create great texture.
