Chop the apples into pieces after peeling the skin off.

Toss the apple chunks into a big, lidded pot and pour in the water.

On medium heat, let everything slowly bubble. Lower the heat, pop the lid on, and let it cook gently.

Stir every so often while letting it cook slowly with the lid on for about an hour.

When most water's gone, the apples should look deep and caramel-colored. Stir more often now. Keep cooking till it thickens and becomes soft. Mash any big pieces with a spoon.
