Choco Cheesecake Bars (Print Version)

# Ingredients:

β†’ Crust

01 - 1/4 cup butter, melted
02 - 1 1/2 cups crushed chocolate cookies (you'll need around 20)

β†’ Cheesecake Layer

03 - 1 cup mini chocolate chips (save some for topping)
04 - 16 oz of softened cream cheese
05 - 1 teaspoon vanilla extract
06 - 1/2 cup granulated sugar

β†’ Chocolate Ganache Topping

07 - 1 cup semi-sweet chocolate chips
08 - 1 cup heavy cream

# Instructions:

01 - Mix the cookie crumbs and melted butter in a mixing bowl until everything sticks together. Press the mixture firmly into the base of an 8x8 pan lined with parchment paper. Pop it in the fridge to chill while you make the next layer.
02 - In a big bowl, beat together the cream cheese, sugar, and vanilla until you get a smooth and fluffy blend. Carefully stir in most of the mini chocolate chips (set aside some for garnish).
03 - Take the crust out of the fridge and spread the cheesecake mix evenly on top. Use a spatula to smooth it out nicely. Let the dish chill in the fridge for 3 to 4 hours, so it firms up well.
04 - Warm up the heavy cream in a small pot over medium heat. Once you see it start to simmer, take it off the burner and stir in the chocolate chips until it’s silky and smooth.
05 - Pour the ganache over the cooled cheesecake layer. Spread it out evenly, then sprinkle the remaining chocolate chips on top. Chill again for another hour or two to let the ganache set.
06 - Lift the dessert out of the pan by grabbing the edges of the parchment paper. Slice into bars using a sharp knife. Clean the knife between cuts to keep each slice looking neat. Serve cold and enjoy!
