Cheesy Chicken Salad (Print Version)

# Ingredients:

→ Chicken Salad Base

01 - 2 tablespoons green onion, sliced thin
02 - ¼ cup celery, finely chopped
03 - ¼ cup red onion, chopped small
04 - 1 cup cooked rotisserie chicken, diced into small bits
05 - ¼ cup jarred banana peppers, chopped (spicy or mild)
06 - ½ cup low-fat cottage cheese, blended until creamy

→ Seasonings

07 - ¼ teaspoon black pepper and salt
08 - ½ teaspoon garlic powder
09 - ½ teaspoon Dijon mustard or spicy mustard

# Instructions:

01 - Whip cottage cheese, mustard, salt, pepper, and garlic powder in a food processor until silky smooth.
02 - Dump the smooth cottage cheese mixture into a big bowl along with green onion, banana peppers, diced celery, chopped red onion, and chicken. Give it a good mix until everything’s evenly blended.
03 - Take a taste and tweak the salt or seasoning if needed. Eat right away or chill in the fridge until serving time.
