Cheesy Egg Casserole (Print Version)

# Ingredients:

01 - 1/2 teaspoon salt
02 - 1/4 teaspoon black pepper
03 - 1/2 teaspoon onion powder
04 - 1/2 teaspoon garlic powder
05 - 1/2 cup chopped onion
06 - 1/2 cup diced bell pepper
07 - 1 cup chopped spinach
08 - 1 cup shredded cheese
09 - 2 cups cottage cheese
10 - 6 large eggs
11 - Sliced avocado or tomatoes for garnish (optional)
12 - Fresh herbs to sprinkle on top (optional)

# Instructions:

01 - Turn the oven to 350°F (175°C). Coat a baking dish (9x9-inch) with some oil or butter so nothing sticks.
02 - Crack the eggs into a bowl and whisk them well. Add cottage cheese and stir until combined.
03 - Throw in the spinach, bell pepper, chopped onion, and sprinkle the garlic powder, onion powder, salt, and pepper. Stir everything together.
04 - Stir in shredded cheese, saving a bit for the top if you like. Pour the mix into your baking dish and sprinkle the saved cheese on top.
05 - Put it in the oven and bake for 40–45 minutes. The top should be golden, and it should feel firm. Let it rest for five minutes before cutting.
06 - Scatter fresh herbs or add sliced avocado or tomatoes on top if you want. Serve and enjoy!
