Turn the oven to 350°F (175°C). Coat a baking dish (9x9-inch) with some oil or butter so nothing sticks.

Crack the eggs into a bowl and whisk them well. Add cottage cheese and stir until combined.

Throw in the spinach, bell pepper, chopped onion, and sprinkle the garlic powder, onion powder, salt, and pepper. Stir everything together.

Stir in shredded cheese, saving a bit for the top if you like. Pour the mix into your baking dish and sprinkle the saved cheese on top.

Put it in the oven and bake for 40–45 minutes. The top should be golden, and it should feel firm. Let it rest for five minutes before cutting.
