Effortless Chicken Feta Spinach (Print Version)

# Ingredients:

→ Chicken

01 - 2 tablespoons olive oil
02 - 1 teaspoon smoked paprika
03 - 1 teaspoon dried oregano
04 - 1 teaspoon garlic powder
05 - 0.5 teaspoon freshly ground black pepper
06 - 1 teaspoon fine salt
07 - 4 chicken breasts, no bones or skin

→ Filling

08 - 1 tablespoon olive oil
09 - 0.5 teaspoon red pepper flakes
10 - 2 garlic cloves, minced
11 - 0.5 cup sun-dried tomatoes, chopped
12 - 1 cup crumbled feta cheese
13 - 1 cup spinach, chopped up

# Instructions:

01 - Let the chicken rolls chill out for five minutes. After that, take out the toothpicks and slice them up to serve.
02 - Put your oven on at 190°C. Pop the skillet in and let the chicken rolls cook for 20 to 25 minutes till the inside hits 75°C.
03 - Pour 2 more tablespoons olive oil into a big pan that can go in the oven. Crank up the heat to medium-high. Sear the stuffed chicken a couple of minutes each side, just till it looks golden everywhere.
04 - Put the filling across the middle of each piece of chicken. Roll 'em up snug and fasten them with toothpicks or string.
05 - Drizzle a bit of olive oil in a pan on medium. Toss in garlic for about half a minute. Dump in the chopped spinach and cook until it shrinks down, just a minute or two. Take off the heat. Stir in the feta plus the sun-dried tomatoes. Want some kick? Sprinkle in those pepper flakes.
06 - Sprinkle both sides of chicken with salt, pepper, smoked paprika, dried oregano, and some garlic powder.
07 - Slice open each breast sideways then gently flatten them out till they're just about half a centimeter thick. This will help you roll them later.

01 - Flatten chicken as evenly as you can so it all cooks at the same speed.
02 - Stick a meat thermometer in to make sure the chicken's cooked through.
