Creamy Chicken Gnocchi (Print Version)

# Ingredients:

01 - 1 pound (450 grams) chicken breast, roughly ¾ – 1 inch pieces, about 2 breasts
02 - 16 ounces (450 grams) gnocchi
03 - 2 tablespoons (30 ml) olive oil or oil from a sundried tomato jar
04 - 1 cup (240 ml) heavy cream (also called double cream in the UK)
05 - 1 cup (240 ml) chicken stock
06 - ½ cup parmesan cheese, grated
07 - 2 tablespoons (26 grams) butter
08 - ⅓ cup sundried tomatoes, finely chopped
09 - 2 cups baby spinach leaves
10 - 2 garlic cloves, minced

11 - 1 teaspoon smoked paprika
12 - 1 teaspoon Italian seasoning
13 - ½ teaspoon salt
14 - ¼ teaspoon ground black pepper

# Instructions:

01 - Get a large stainless steel skillet (around 12 inches wide) and warm up the oil over medium-high heat. Toss the chicken in and sprinkle it with salt, pepper, and Italian seasoning. Let it cook for 4–5 minutes, or until you see 165°F/74°C on your thermometer. Once done, move the chicken to a plate and keep it aside for later.
02 - Use the same pan and melt the butter in it. Stir in the minced garlic for about 30 seconds until it smells nice. Pour in the chicken stock and gently scrape up any browned bits stuck to the bottom with a wooden spoon to mix it all in.
03 - Add heavy cream and slide the gnocchi into the pan. Let it gently bubble for about 5 minutes. This will soften up the gnocchi while the sauce gets rich and creamy.
04 - With the heat set to medium-low, stir in the parmesan, smoked paprika, and sundried tomatoes. Mix them well so everything comes together.
05 - Add the spinach to the pan and gently stir until it wilts. If the sauce feels thick, a tiny bit of water will loosen it up. Throw the chicken back into the pan, mix one last time, and take the pan off the heat. Serve it right away.

# Notes:

01 - A nice dry white wine works great with this meal. You can even use the same wine while sautéing instead of chicken stock for a punchier flavor.
02 - Pick gnocchi labeled ready-to-cook. Frozen ones often don't cook the same way and may not work here.
03 - Spinach is optional! Swap it for basil leaves if you'd prefer.
04 - Boneless skinless chicken thighs are a good swap if you're not into chicken breasts.
05 - The oil in sundried tomato jars is super flavorful—use it instead of regular olive oil when you can.
