Chocolate Almond Cookies (Print Version)

# Ingredients:

01 - 1 tsp baking powder
02 - pinch of salt
03 - 1 Tbsp orange zest (optional)
04 - 1/2 cup chocolate chips
05 - 1 tsp vanilla or almond extract
06 - ¾ cup sugar
07 - 3 cups almond flour (not almond meal)
08 - 3 egg whites
09 - 1 cup sliced almonds
10 - powdered sugar for dusting

# Instructions:

01 - Set your oven to 350°F and let it warm completely.
02 - Place parchment paper on a baking tray and leave it to the side.
03 - Mix the almond flour, sugar, salt, baking powder, and optional orange zest in a bowl. Leave it aside.
04 - In a separate bowl, use an electric mixer to beat the egg whites with the vanilla extract until stiff peaks form.
05 - Gently fold the whipped egg whites into the dry mix, using a spatula, until you get a sticky dough.
06 - Carefully stir the chocolate chips into your dough until evenly spread.
07 - Spread sliced almonds on a flat surface. Scoop roughly two tablespoons of dough, roll it in almonds, and shape into a ball.
08 - Place the dough balls in the oven's center and bake for 15–20 minutes. Edges should look golden, but the middle will still be pale.
09 - Cool the cookies on the tray for 10 minutes, then transfer to a wire rack for another 10 minutes.
10 - Sprinkle powdered sugar over the cookies and enjoy!

# Notes:

01 - Keep cookies fresh for a week in an airtight container at room temp, or freeze them up to 3 months.
02 - Try swapping orange zest with lemon zest, or skip the zest and the chocolate chips for a simpler version.
