Healthy Chickpea Snack Mix (Print Version)

# Ingredients:

→ Crunchy Chickpea Mix Additions

01 - 15-ounce can of chickpeas, low sodium, rinsed and drained
02 - 1/2 tbsp melted coconut oil
03 - 1/2 tbsp real maple syrup
04 - 1/2 tsp ground cinnamon
05 - 1/2 tsp coarse salt
06 - 1/8 tsp smoked paprika, if desired
07 - 1/4 cup raw pumpkin seeds (pepitas)
08 - 1/4 cup raw pecan halves or almonds
09 - 1/3 cup tart dried cherries
10 - 1/4 cup dark chocolate morsels

# Instructions:

01 - Turn the oven to 375°F (190°C) and let it warm up. Put parchment paper on a baking tray, then pat the chickpeas dry. Discard any skins that fall off.
02 - Spread chickpeas flat on the sheet. Bake for 10 minutes without adding anything. This step makes them extra crispy.
03 - Take the chickpeas out of the oven. Quickly drizzle them with melted coconut oil and maple syrup. Sprinkle cinnamon, salt, and paprika on top. Toss carefully since the pan is hot, then bake for 10 more minutes.
04 - Shake the baking sheet a little to move the chickpeas around. Spread pumpkin seeds and nuts evenly on the tray. Bake another 8–10 minutes until the nuts get golden and the chickpeas turn deep brown.
05 - Let the nuts and chickpeas cool all the way. Put them in a bowl and toss them with the cherries and chocolate bits. Serve right away or store for later.

# Notes:

01 - Keep the mix fresh in an airtight jar for about a week. Use parchment-lined bags for extra crunchiness.
02 - Don’t freeze it. Freezing makes the chickpeas and nuts lose their crispness.
