Chocolate Cottage Cookies (Print Version)

# Ingredients:

01 - 1 1/4 cups almond flour
02 - 1/3 cup brown sugar
03 - 1/4 cup butter, softened
04 - 1 teaspoon baking powder
05 - 1 large egg
06 - 1/2 cup chocolate chips
07 - 1/2 cup cottage cheese (2%)
08 - 1 teaspoon vanilla extract

# Instructions:

01 - Cover the baking tray with parchment paper.
02 - Beat together your softened butter and brown sugar till creamy.
03 - Stir in the egg and the vanilla and mix thoroughly.
04 - Blend the cottage cheese with a hand mixer or food processor until smooth.
05 - Throw the blended cottage cheese into the creamed mixture and stir well.
06 - Toss in the almond flour and baking powder, and mix it until it's a nice soft dough.
07 - Carefully stir in your chocolate chips till evenly spread.
08 - Set your oven to 350°F (175°C) and let it warm up.
09 - Drop dough balls onto your parchment-covered tray using a cookie scoop.
10 - Pop them in the oven and bake for 10-12 minutes, or until the edges look golden.
11 - Move the cookies to a rack and let them cool all the way before eating.
