Cider Bread with Spice (Print Version)

# Ingredients:

→ For the bread

01 - 1 large egg
02 - ½ teaspoon baking soda
03 - 2 cups flour
04 - ½ cup butter, softened
05 - ½ teaspoon salt
06 - 1 teaspoon baking powder
07 - 2 cups apple cider
08 - 1 cup brown sugar
09 - 1 tablespoon apple pie spice
10 - 1 teaspoon vanilla extract

→ For the topping

11 - ½ cup sugar
12 - 1 tablespoon cinnamon
13 - ¼ cup butter, melted

# Instructions:

01 - Pour apple cider into a pot. Heat on medium until it boils, then lower to a simmer and let it cook down by half, which takes about 20-30 minutes. Set aside and let it cool completely before using.
02 - Turn on the oven to 350°F (175°C). Grease a 9x5-inch loaf pan with butter or spray it with nonstick spray.
03 - Cream the butter and sugar in a bowl with a hand mixer until it’s fluffy. Add the egg and vanilla, and blend again until smooth.
04 - Throw the dry ingredients into the wet mix with the cooled-down apple cider. Stir together gently by hand until the batter just comes together. Don’t overmix.
05 - Scoop the batter into the greased loaf pan and place it in the oven. Bake for about 50 minutes, or until a toothpick poked in the center comes out clean.
06 - Let the loaf rest in the pan for 15 minutes. Then gently move it to a rack placed over a baking sheet to continue cooling.
07 - Brush melted butter all over the loaf’s top and sides. In a separate bowl, mix the sugar and cinnamon, then generously sprinkle it over the loaf until it's coated. Let the leftover sugar fall into the sheet below.
08 - Wait about an hour for the loaf to cool completely. Cut into slices and dig in.

01 - Simmering the apple cider makes the flavor stronger, so don’t skip it if you want that bold apple taste.
02 - The melted butter and cinnamon sugar layer make the loaf’s crust crisp with a donut-kind-of vibe.
03 - If apple cider isn’t handy, apple juice can work too. Just note it might make the loaf sweeter.
