Grab your big bowl and toss in baking powder, salt, cinnamon, sugar, and flour. Mix it all up until it looks super even.

Pour in vanilla, melted butter, and milk. Use a spatula and mix until you have a dough that sticks together.

Turn your oven on to 175°C. Roll your dough out to about 3 millimetres thick between two pieces of parchment.

Take off the top sheet of parchment. Cut the rolled dough into squares about 1.25 centimetres wide using a knife or pizza cutter. Move the whole thing onto a baking tray, keeping it on the parchment.

Let the tray hang out in the oven for 10 to 12 minutes. When those little squares are crunchy and golden, you’re all set.

While the cereal bakes, grab a tiny bowl and stir together cinnamon and sugar. Melt the butter in a different bowl.

Once the squares are still warm but out of the oven, brush the tops with melted butter. Shake your sugar-cinnamon mix over everything.

Pop all the cereal onto a rack to cool down. If any stick together, just break them apart. Eat now or stash in a sealed container for up to a week.
