Coffee Date Cake (Print Version)

# Ingredients:

→ Cake Base Stuff

01 - 1 ½ teaspoons baking soda
02 - 1 teaspoon cinnamon
03 - ¼ teaspoon salt
04 - 1 large egg
05 - 1 cup walnuts, toasted and chopped up
06 - 2 ½ cups chopped dates
07 - ½ cup butter
08 - ¾ cup brown sugar
09 - 1 ¾ cups all-purpose flour
10 - 1 ½ cups hot coffee or prepared espresso
11 - ½ cup granulated sugar
12 - ⅛ teaspoon nutmeg
13 - 1 tablespoon vanilla

→ Glaze Stuff

14 - ½ teaspoon instant espresso
15 - ½ cup toasted walnuts, chopped (optional)
16 - 3 tablespoons butter, melted
17 - 2 cups powdered sugar
18 - 1 teaspoon vanilla
19 - 2 tablespoons hot water

# Instructions:

01 - In a big bowl, mix up the chopped dates, coffee or espresso, and baking soda. Leave it alone for a bit so things can blend together.
02 - Get a small bowl and toss in the flour, spices (cinnamon and nutmeg), and salt. Mix them so they're combined.
03 - Beat the softened butter with both brown and white sugar until it looks airy and creamy.
04 - Crack in the egg and add a splash of vanilla to the beaten butter. Mix until it's smooth.
05 - Strain the dates to separate the liquid but save both. Add the date liquid and the dry ingredients to the butter mixture in turns, ending with the liquid. Scrape the sides as you go, and don't overmix.
06 - Fold the strained dates and toasted walnuts gently into the batter until everything's combined.
07 - Grease a loaf pan (9x5 inches) with butter or spray. Line it with parchment paper and give the paper a light spray too.
08 - Pour the batter into the loaf pan and pop it in the oven. Bake at 350°F for about an hour. Check with a toothpick; it should come out clean.
09 - Once it's baked, let the cake sit in the pan for 20 minutes. Then pull it out, remove the parchment, and let it fully cool on a wire rack.
10 - Stir together the hot water and espresso until the coffee blends in. In another bowl, whisk this coffee mix with powdered sugar, melted butter, and vanilla. Add a bit more water if it's too thick.
11 - Drizzle the glaze over the cooled-down cake. Sprinkle with chopped walnuts if you like. Let everything settle before slicing.
