Cozy Apple Butter Oatmeal Cream (Print Version)

# Ingredients:

→ Ice Cream Base

01 - 240 ml apple butter
02 - 5 large egg yolks
03 - 2.5 ml vanilla extract
04 - Pinch fine salt
05 - 100 g granulated sugar
06 - 360 ml heavy cream
07 - 360 ml whole milk

→ Oatmeal Crumble

08 - 42 g unsalted butter, melted
09 - 0.5 g ground cinnamon
10 - 53 g light brown sugar
11 - 45 g old-fashioned oats
12 - 45 g all-purpose flour

→ To Serve

13 - Whipped cream if you want
14 - Salted caramel sauce for topping

# Instructions:

01 - Dish out scoops and top with some whipped cream and a good drizzle of salted caramel if that sounds good to you.
02 - Once your custard is nice and cold, churn it like your machine says. As you transfer ice cream to a freezer dish, drop in oatmeal crumble between the layers. Pop it in the freezer until it’s scoopable.
03 - Set your oven to 190°C. In a bowl, mix cinnamon, flour, oats, brown sugar, and melted butter using your hands until it comes together. Break into chunks (no bigger than 1.5 cm), lay out on a 33 x 23 cm baking tray, and bake 10 minutes. Let it cool off before using.
04 - Dump the chilled custard and apple butter into your blender. Blend until crazy smooth. Scrape into a bowl, cover, and chill until it’s super cold (overnight is best for flavor).
05 - Keep stirring while simmering the mixture on medium, until it feels thick and covers a wooden spoon. Take it off heat, strain it into your reserved heavy cream using the mesh strainer, and toss any leftover bits. Set the bowl over ice to cool it down to room temp.
06 - Get 180 ml of heavy cream in a big bowl with a strainer ready on top. In a saucepan, whisk together whole milk, sugar, salt, vanilla, and the rest of the heavy cream over medium heat. Stir it while it heats up and sugar melts—look for some steam.
07 - Whisk the egg yolks in a fresh bowl. Slowly add in 240 ml of the heated milk mixture while whisking so the eggs don’t scramble. Pour this combo back into your saucepan for the next step.
