In a big bowl, grate the onion. Toss in the ground beef, breadcrumbs, egg, cream, salt, and pepper. Mix everything with your hands until it's all combined. Split the mix into 4 parts and shape them into patties about 2 cm thick. Put aside for now.

Dice the onion, mince garlic, and finely chop some dill to use later.

Warm up some olive oil and butter in a big pan over medium heat. Fry the patties for 4-5 minutes on each side until they're nice and golden. Move them to a clean plate when done.

Turn the heat down low. Add onion and garlic to the pan and let them cook until they smell great, roughly 2 minutes. Stir in the flour, salt, and pepper, allowing it to blend in. Pour in the broth, scraping up the flavorful bits, and let it simmer for 2 minutes.

Pour the cream and dill into the skillet. Let it start boiling, then gently simmer for a minute or two until it begins to thicken. Slide the patties back into the sauce and cook for another 5-6 minutes until warmed through. Sprinkle fresh dill and cracked pepper on top before serving.
