# Ingredients:

01 - 1 cup sweet rice flour
02 - 2 medium potatoes, peeled and chopped into pieces
03 - 1/2 cup water
04 - 1 tablespoon granulated sugar
05 - 2 tablespoons soy sauce
06 - Cooking oil for frying
07 - Green onions, diced, optional for topping
08 - Sesame seeds, optional for sprinkling

# Instructions:

01 - Mix the mashed potatoes, water, sweet rice flour, and sugar in a bowl. Keep stirring until the dough feels stretchy and smooth.
02 - Put potato chunks into a pot with salted, boiling water. Let them cook until soft, 15 to 20 minutes. Drain, then mash them to get a smooth texture.
03 - Roll the dough into small balls that are all about the same size.
04 - Warm oil in a skillet over medium heat. Press each ball into a disk shape and fry a few at a time. Flip after 3–4 minutes per side until they're crispy and golden.
05 - Take mochi out and place them on paper towels to soak up the extra oil.
06 - Top with soy sauce and, if you'd like, sprinkle on green onion bits or sesame seeds for a finishing touch.
07 - Serve them while still warm and dig in.
