Effortless Funfetti Pan-Banging (Print Version)

# Ingredients:

→ Dry mix

01 - 0.75 teaspoon fine sea salt
02 - 0.5 teaspoon baking soda
03 - 250 grams plain flour

→ Creaming stuff

04 - 55 grams packed light brown sugar
05 - 300 grams granulated sugar
06 - 226 grams unsalted butter, softened

→ Wet bits

07 - 2 tablespoons water
08 - 1 teaspoon almond extract
09 - 1 teaspoon vanilla extract
10 - 1 large egg

→ Fun add-ins

11 - 75 to 110 grams rainbow jimmies sprinkles

# Instructions:

01 - Pop your oven to 175°C to warm up. Slap parchment paper onto three baking sheets and set them aside.
02 - Toss salt, baking soda, and flour in a bowl. Give 'em a good whisk. Once mixed, put the bowl out of your way.
03 - With your stand mixer fitted with the paddle, beat the butter until it's smooth. Dump in your brown and white sugars. Let it go for a couple minutes till fluffy and light.
04 - Pour in water, almond and vanilla extracts, plus one egg to the creamed stuff. Let it mix on low just till it blends in.
05 - Chuck in your bowl of dry mix and let the mixer swirl it slowly, just enough so there aren't visible streaks.
06 - Fold in those bright jimmies carefully. Stop once they're spread throughout so you don't mash 'em.
07 - Use a big scoop or 1/3 cup to scoop about 75 grams for each ball. Pop four spaced-out dough balls on every sheet.
08 - Slide the prepared sheets with dough into your freezer for a quick 15-minute chill.
09 - Move one cold tray into the hot oven. Bake for 10 minutes, then grab the sheet and gently drop it back down onto the oven rack from about 10 centimeters. Do this every 2 minutes (lift and drop) until the total time is up, around 16 to 18 minutes, edges look golden, centers still look soft.
10 - Take sheets out and slide them onto a cooling rack. Don't touch the cookies until they're fully cool.

# Notes:

01 - You gotta keep the dough balls big and chill them before baking to get those crackly edges and chewy bites.
02 - Wanna get that old-school birthday cake vibe? Go for fake vanilla; real vanilla smells more natural, though.
03 - Stick with rainbow jimmies or you'll get bleeding colors if you use nonpareils.
