Set your oven to 350°F and coat a mini muffin pan lightly with oil or non-stick spray.

Spoon around 2 or more tablespoons of mozzarella into every cup of the muffin pan. Then lay 3-4 small pepperoni slices on top and sprinkle some Italian herb mix.

Bake the tray for about 7 to 8 minutes. You’ll know it’s done when the edges of the chips are golden.

Take the tray out and let the chips cool for 5 minutes on the counter. Move them to a plate or tray, and enjoy with marinara if you’d like.
