Toss water, butter, salt, and sugar into a pot and crank up the heat. Let it come to a good, steady boil.

Turn the heat down. Throw in your flour slowly and stir the whole time until the dough shapes up, pulls away from the sides, and forms a ball. Take it off the stove.

Move that dough into a bowl and leave it alone for 4–5 minutes so it cools off a bit. Crack in an egg and pour in the vanilla, then use a hand mixer and blend until it's all super smooth.

Scoop the churro dough into a piping bag with a star tip. Spray the air fryer basket with oil spray and set the air fryer to 190°C so it gets hot.

Pipe out little churro chunks right inside the basket (or drop spoonfuls if you want). Dab the tops with melted butter. Fry at 190°C for about 10–12 minutes till they're golden. Work in batches if the basket's full.

Mix sugar and cinnamon in a shallow bowl. Once your churro bites are hot out of the fryer, pop them into the cinnamon sugar and roll them around so they get a nice coat. If they need help sticking, brush on a tiny bit of melted butter or spritz with water.

Enjoy the churros while they're still warm! Dunk them in chocolate, honey, or hazelnut spread if you want to level things up.
