Pop the onion chunks and parsley into your food processor. Pulse until everything's really fine.

Drop the ground meat into a big bowl. Toss in the processed parsley and onion along with your spices. Use your hands to mash them all together until mixed well.

Grab some of the mixture and press it around a skewer with your hands. Aim for kebabs about 1–1.5 inches thick.

Turn your gas grill to medium-high and oil the grates. Using charcoal? Get it going the way you like.

Lay your skewers on the grill. Let one side cook for around 4 minutes before turning them over. Cook the other side for 4 minutes or until done.

Serve those kebabs right away while they're warm.
