Set your oven to 375°F (190°C) and place parchment paper on a baking tray.

On a clean counter, spread one phyllo sheet and cover lightly in butter. Stack a second sheet on top, adding more butter. Keep going until you’ve got four layers total.

Take the stacked phyllo and cut it into strips around 3 inches wide. Put a feta piece at one end of each strip.

Fold the edges of the phyllo around the feta and roll it up. Seal the edge and lay it seam-side down on the lined tray.

Spread the leftover butter on the outside of the phyllo rolls. Bake for 20 to 25 minutes until the outside turns golden and crunchy.

With the rolls baking, warm some honey in a pan over a low flame. Stir in the chili flakes and vinegar until well blended.

After baking, drizzle the phyllo rolls with the spicy honey mixture. Toss on parsley for some extra flavor, if you like. Dig in while warm!
