Set your oven to 400°F (200°C) to preheat. Use a damp paper towel to gently clean off the mushrooms, and trim their stems a little without removing them.

Grab a small bowl and mix honey, balsamic vinegar, olive oil, and soy sauce with the minced garlic. Sprinkle in salt and pepper, and stir until smooth.

Put all the mushrooms in a big bowl, then pour the sauce on top. Gently stir so every mushroom gets coated evenly.

Cover a baking pan with foil or parchment paper. Lay the mushrooms out evenly, making sure they're not piled on top of each other.

Slide the pan into the oven for 20 minutes. Stir the mushrooms halfway so they caramelize nicely and don’t stick. The sauce will turn sticky and rich.

Take the mushrooms out when they’re golden and tender. Move them to your serving plate, add any leftover sauce, and sprinkle parsley on top if you’d like.
