Cut your steak into about 2-inch chunks. Toss them into a mixing bowl for seasoning later.

Stir the smoked paprika, garlic powder, oregano, salt, black pepper, brown sugar, onion powder, thyme, and cayenne together in one small bowl.

Dump the seasoning blend into the bowl with the steak and toss everything together until the pieces are well coated.

Set a heavy skillet on medium-high heat. Let it warm up until you spot a bit of smoke.

Pour half the vegetable oil into the hot skillet and swirl it around. Put half the steak pieces in, making sure they don’t overcrowd. Sear for 2 minutes untouched, flip, and sear another 2 minutes. Remove these, repeat the steps with the last oil and meat batch.

Turn the heat down to medium-low and keep using that skillet. Melt your butter, then throw in the garlic. Let it cook for 30 seconds while gently scraping up the browned bits with a wooden spoon.

Switch off the stove, return the steak bites to the skillet, and stir them around so they’re evenly coated in all that saucy goodness.
