Goat Cheese Fig Pastry (Print Version)

# Ingredients:

01 - 4-5 sprigs of fresh thyme
02 - 1 sheet of puff pastry, thawed (13.2 oz)
03 - 4 oz goat cheese log, crumbled
04 - 1 large egg
05 - ½ cup fig jam
06 - 2 tablespoons of light brown sugar

# Instructions:

01 - Lay the thawed puff pastry flat on parchment paper. Spread the fig preserves on the pastry, leaving about an inch on the edges untouched.
02 - Evenly scatter the crumbled goat cheese over the jam. Follow with a sprinkle of thyme leaves and brown sugar across the surface.
03 - Roll the pastry tightly into a log shape without any gaps. Cover it with parchment paper and freeze for 20 minutes until firm.
04 - Set your oven temperature to 400°F (200°C) while waiting.
05 - Take the pastry out of the freezer. Slice the log into ½-inch thick wheels, using a sharp knife and cleaning it between cuts if needed.
06 - Arrange the cut pastry rounds on a parchment-lined baking sheet, leaving space between each.
07 - Whisk the egg in a small bowl to make an egg wash. Gently coat the tops of the pastries using a pastry brush.
08 - Bake the pinwheels in your hot oven for about 15 to 20 minutes, or until they're golden and crisp.
09 - If you'd like, sprinkle more brown sugar and thyme over the top. Serve warm and enjoy your treat.
