Grilled Miso Rice Balls (Print Version)

# Ingredients:

→ Rice Balls

01 - 2 cups water
02 - 2 cups short-grain rice, uncooked

→ Miso Blend

03 - 1.5 tbsp butter
04 - 1 tbsp miso
05 - 2 tsp sake
06 - 2 tsp sugar
07 - 2 tsp mirin
08 - 1 tsp sesame seeds
09 - 1 tsp minced chives

→ Soy Sauce Mix

10 - 1.5 tbsp unsalted butter
11 - 1.5 tbsp bagel mix seasoning
12 - 1.5 tbsp vegetable oil
13 - 1 tbsp soy sauce

# Instructions:

01 - Use your rice cooker and follow its instructions to cook the rice properly.
02 - Stir together miso, sake, mirin, sugar, and make sure the mix is smooth.
03 - While the rice is still warm, split it into six portions. Use cling film to help shape each portion into a triangle.
04 - Warm your pan over medium and melt butter. Cook each rice ball for 1 minute per side, then coat with miso blend. Keep grilling until golden and crispy. Add sesame seeds and chives for extra flavor.
05 - In a hot pan with oil over medium heat, grill rice balls for a minute on each side. Brush soy sauce generously as you flip them multiple times. Add butter on top and sprinkle with bagel seasoning before serving.

# Notes:

01 - Working with warm rice makes shaping much easier.
02 - Make sure the rice balls are firm enough so they stay intact during cooking.
03 - Keep an eye on miso grilling since the sugar can burn quickly.
