Cosmic Brownie Bites Healthy Vegan (Print Version)

# Ingredients:

01 - 50 g candy-coated chocolate chips

→ Brownie Bite Base

02 - 140 g whole almonds
03 - 225 g medjool dates, pitted and packed
04 - 2 teaspoons vanilla extract
05 - 20 g unsweetened shredded coconut
06 - 120 g walnut halves
07 - 25 g unsweetened cocoa powder
08 - 15–30 ml maple syrup, add if mixture is dry
09 - 1/4 teaspoon fine sea salt

# Instructions:

01 - Scoop out bits of dough and gently roll them between your palms until you’ve got 20 nice little balls.
02 - Move the blended dough into a mixing bowl. Sprinkle in the chocolate candies and stir everything well so the treats get good and chocolatey.
03 - Run everything in the food processor until it turns nice and sticky and starts clumping up. If it looks too loose or dry, trickle in a bit of maple syrup until the dough sticks together.
04 - Toss in the pitted dates first, then go ahead and add your almonds, walnuts, coconut, cocoa powder, vanilla, and salt.

# Notes:

01 - Keep brownie bites fresh for three days in a covered container on your counter, or stash them in the fridge for up to a week. They’ll last for months if you freeze them.
