Thai Lime Garlic Steamed Fish (Print Version)

# Ingredients:

→ Steamed Fish

01 - Lime wedges to squeeze on at the table
02 - A handful of cilantro leaves, roughly torn, for on top
03 - A small red chili, sliced thin (only if you like some heat)
04 - 1 teaspoon of white sugar
05 - 1 tablespoon soy sauce
06 - 1 tablespoon fish sauce
07 - 2 tablespoons lime juice, freshly squeezed
08 - 3 garlic cloves, chopped up fine
09 - 4 fillets of white fish like snapper, tilapia, or cod (no bones or skin)

→ Coconut Lemongrass Sauce

10 - Couple spoonfuls of chopped fresh cilantro
11 - 1 teaspoon fresh grated ginger
12 - A small red chili, chopped up small (optional)
13 - 1 tablespoon lime juice
14 - 1 tablespoon sugar
15 - 2 tablespoons fish sauce
16 - 1 stalk lemongrass, whacked and bruised
17 - A can (400ml) coconut milk

# Instructions:

01 - Move your steamed fish onto plates. Pour over that dreamy coconut lemongrass sauce. Top everything with cilantro and put some lime wedges on the side for a final zing.
02 - Let the sauce simmer till it thickens just a bit and smells amazing, about 10 minutes. Take the lemongrass out and toss in the chopped cilantro. Give it a little stir.
03 - Pour the coconut milk, toss in the lemongrass, add fish sauce, sugar, lime juice, the chili (if using), and fresh ginger into a medium pot. Bring it all to a gentle bubble while stirring now and then.
04 - Set your plate of marinated fish into the steamer over simmering water. Pop the lid on. Let it steam for 10 to 12 minutes — fish is done when you can flake it easily.
05 - Put your fish fillets on a heatproof dish. Drizzle all the garlicky, zesty mixture across the top so they're well coated.
06 - Grab a small bowl and mix up the chopped garlic, lime juice, both sauces, sugar, and the sliced chili if you want some heat. Stir that together real good.
