Warm the olive oil in a skillet, 12 inches wide, over medium heat. Cook the ground beef and onions until the meat loses its pink color and the onions are soft and see-through.

Toss in the taco seasoning, the undrained Rotel tomatoes, water, and the uncooked spaghetti noodles.

Turn the stove to high to bring everything to a boil. Then, drop the heat to low, pop a lid on top, and let it cook gently for about 15 minutes.

Take the pan off the stove. Sprinkle in half the cheddar cheese and stir it around so it melts into the spaghetti and beef.

Scatter the leftover cheese on top, then sprinkle with the cilantro before serving.
