Garlic Parmesan Sprouts (Print Version)

01 - 1/2 cup Parmesan cheese, grated (use more if you like)
02 - 3 garlic cloves, finely chopped
03 - 16 oz (450g) Brussels sprouts, cleaned and dried
04 - 1 teaspoon Italian herbs mix
05 - 1/2 teaspoon each of kosher salt and cracked black pepper
06 - 3 tablespoons of olive oil (or melted butter)

# Instructions:

01 - Set your oven to 400°F (200°C) and place the rack in the middle. Let it heat up while you prep.
02 - Cut off the tough ends of the Brussels sprouts. Then slice them in half lengthwise.
03 - Grease a baking sheet with a little oil. If you’d prefer, you can line it with parchment, though it might reduce caramelization.
04 - Make sure the Brussels sprouts are dry using paper towels. Toss them in a big bowl with olive oil, garlic, Italian herbs, Parmesan, and salt and pepper, coating them thoroughly.
05 - Lay the seasoned Brussels sprouts cut-side down on the baking sheet. Spread them out in one single layer.
06 - Pop the Brussels sprouts in the oven and roast for about 25-30 minutes, or until the edges are golden and crispy. Keep an eye on them as baking times can vary between ovens.
07 - Move the roasted Brussels sprouts to your serving bowl. Add some freshly chopped parsley on top, if you’d like. Dig in!
