Set your oven to 400°F (200°C) and place the rack in the middle. Let it heat up while you prep.

Cut off the tough ends of the Brussels sprouts. Then slice them in half lengthwise.

Grease a baking sheet with a little oil. If you’d prefer, you can line it with parchment, though it might reduce caramelization.

Make sure the Brussels sprouts are dry using paper towels. Toss them in a big bowl with olive oil, garlic, Italian herbs, Parmesan, and salt and pepper, coating them thoroughly.

Lay the seasoned Brussels sprouts cut-side down on the baking sheet. Spread them out in one single layer.

Pop the Brussels sprouts in the oven and roast for about 25-30 minutes, or until the edges are golden and crispy. Keep an eye on them as baking times can vary between ovens.

Move the roasted Brussels sprouts to your serving bowl. Add some freshly chopped parsley on top, if you’d like. Dig in!
