On medium heat, warm olive oil in a pan. Toss in onion and garlic, letting them soften for a minute or two.

Quickly chop the spinach and add it to the pan. Stir for another minute or two until it starts to wilt.

Toss the black beans and corn into the pan. Keep stirring for 5-6 minutes till heated through.

Lower the heat slightly, sprinkle in the paprika, cumin, salt, and pepper, then mix everything together. Scatter the cheese and gently stir until it melts completely.

Put the flour tortillas on a plate. Cover each one with a damp paper towel. Heat them up in the microwave for 20 seconds to make them pliable.

Lay a tortilla flat on a work surface. Spoon a few hearty scoops of the filling right into the center.

Fold both sides of the tortilla in toward the filling. Tuck the bottom up and wrap snugly to make a burrito. Make sure the sides stay folded as you roll.
