15-Minute Black Bean Burritos (Print Version)

01 - 2 large flour tortillas
02 - 1/8 teaspoon ground black pepper
03 - 1/2 teaspoon kosher salt
04 - 1 teaspoon cumin
05 - 1 teaspoon paprika
06 - 1 1/4 - 1 1/2 cups shredded cheese (cheddar, pepper jack, Monterey Jack, or a mix)
07 - 1 1/2 cups spinach, packed (about 2-3 oz)
08 - 1 1/2 cups corn or 1 can, drained
09 - 1 1/2 cups black beans or 1 can, drained
10 - 1 cup onion, diced
11 - 2 cloves garlic, minced
12 - 1 tablespoon olive oil

# Instructions:

01 - On medium heat, warm olive oil in a pan. Toss in onion and garlic, letting them soften for a minute or two.
02 - Quickly chop the spinach and add it to the pan. Stir for another minute or two until it starts to wilt.
03 - Toss the black beans and corn into the pan. Keep stirring for 5-6 minutes till heated through.
04 - Lower the heat slightly, sprinkle in the paprika, cumin, salt, and pepper, then mix everything together. Scatter the cheese and gently stir until it melts completely.
05 - Put the flour tortillas on a plate. Cover each one with a damp paper towel. Heat them up in the microwave for 20 seconds to make them pliable.
06 - Lay a tortilla flat on a work surface. Spoon a few hearty scoops of the filling right into the center.
07 - Fold both sides of the tortilla in toward the filling. Tuck the bottom up and wrap snugly to make a burrito. Make sure the sides stay folded as you roll.
08 - Love it with salsa verde, hot sauce, lime, or any toppings you like!

# Notes:

01 - They freeze wonderfully! Skip the cheese before freezing—just cool the mix, add cheese when assembling, then wrap individually in plastic wrap followed by foil. Store for up to 2-3 months.
02 - Microwave warming: Take off wrappings. Heat 6-7 minutes total, flipping halfway through, until thawed. For a crispy finish, use a skillet for 3-4 minutes.
03 - Oven warming: Unwrap and set burrito on a baking sheet. Heat at 400°F for about 45 minutes.
04 - Frozen spinach? No problem! Let it thaw and squeeze out as much water as possible using a dish towel.
05 - Want more protein? Toss in leftover chicken, pork, or beef for extra oomph.
