Chop the sweet potatoes into thick rounds, about 3cm wide. Add them to boiling water with a little salt. Let them soften for 5-8 minutes until a knife slides through easily.

In a bowl, stir together the olive oil, cornstarch, garlic powder, sriracha, salt, and pepper. Keep the honey aside for later.

Take the cooked sweet potatoes out of the water and spread them out evenly on a baking sheet.

Put a little piece of baking paper over each sweet potato piece. Flatten them carefully with the bottom of a cup or jar to about 1cm thick. Do the same for all the slices.

Using a brush, coat one side of the flattened sweet potatoes with the seasoning mix. Turn them over and brush the other side.

Pop the sweet potatoes into the oven or air fryer at 180°C. Cook for 30-40 minutes, flipping halfway through, until both sides are perfectly golden and crispy.

Combine Greek yogurt with salt, pepper, and your choice of garlic powder or freshly minced garlic for a simple creamy sauce.

Toward the last leg of cooking, drizzle honey over the crisp sweet potato pieces. Leave them in for a couple more minutes so they turn sticky.

Remove the potatoes from the oven or air fryer, add a sprinkle of salt or seasoning if needed, and plate them. Enjoy right away with the garlic yogurt for dipping!
