Pile the crunchy okra onto a dish and dig in while it's hot.

Pop the tray in the oven for 25–30 minutes. The okra should brown at the edges and lose its slimy bits.

Lay the seasoned okra out on your tray in a single layer.

Dump your cut okra into a bowl with oil, salt, garlic powder, cumin, smoked paprika, and fennel. Give it all a good toss so every piece gets covered.
