Roasted Okra Smoky Savory (Print Version)

# Ingredients:

→ Spices and Seasonings

01 - 0.5 teaspoon salt
02 - 0.5 teaspoon cumin seeds or use 0.25 teaspoon ground cumin
03 - 0.5 teaspoon fennel seeds
04 - 0.5 teaspoon smoked paprika
05 - 1 teaspoon garlic powder

→ Oils and Fats

06 - 2 tablespoons of avocado oil or whatever mild oil you like

→ Vegetables

07 - 450 grams fresh okra, ends and tops cut off, chopped into 2.5 cm chunks

# Instructions:

01 - Pile the crunchy okra onto a dish and dig in while it's hot.
02 - Pop the tray in the oven for 25–30 minutes. The okra should brown at the edges and lose its slimy bits.
03 - Lay the seasoned okra out on your tray in a single layer.
04 - Dump your cut okra into a bowl with oil, salt, garlic powder, cumin, smoked paprika, and fennel. Give it all a good toss so every piece gets covered.
05 - Get your oven going at 220°C. Cover a baking tray with parchment and have it ready.

01 - Make sure you don't stack the okra—spread them out so they get nice and crispy.
