Turn on your oven to 375°F (190°C). Get a baking sheet prepped by either laying some parchment paper on it or greasing a bagel mold lightly.

Toss the cottage cheese, eggs, honey or syrup, and apple cider vinegar into a blender or food processor. Blend it all together until you get a nice, smooth mix.

Use a big bowl to mix almond flour, salt, baking powder, shredded cheese, garlic powder, and a tiny bit of onion powder.

Pour the cottage cheese mixture into the bowl with the dry stuff. Stir until it all comes together into a dough that feels thick.

Break your dough into 4-6 parts. Roll each piece into a sausage shape, then twist it into a circle. Pop them either onto the baking sheet or into the bagel mold.

Brush the tops with the beaten egg for sheen. Sprinkle sesame seeds, poppy seeds, or Everything Bagel seasoning over the top.

Put your bagels in the oven for 20-25 minutes until they’re nicely golden and feel firm. Let them sit for about 10 minutes once out of the oven before slicing.
