Soft Cottage Cheese Bagel (Print Version)

# Ingredients:

→ Dry Ingredients

01 - ¼ cup grated Parmesan or mozzarella cheese
02 - ½ teaspoon of garlic powder (optional)
03 - ½ teaspoon of onion powder (optional)
04 - ½ teaspoon salt
05 - 1 tablespoon of baking powder
06 - 1½ cups of almond flour

→ Wet Ingredients

07 - 2 large eggs
08 - 1 cup cottage cheese
09 - 1 tablespoon of apple cider vinegar
10 - 1 tablespoon of honey or maple syrup

→ Toppings

11 - 1 tablespoon of sesame seeds or Everything Bagel seasoning
12 - 1 egg, beaten for brushing

# Instructions:

01 - Turn on your oven to 375°F (190°C). Get a baking sheet prepped by either laying some parchment paper on it or greasing a bagel mold lightly.
02 - Toss the cottage cheese, eggs, honey or syrup, and apple cider vinegar into a blender or food processor. Blend it all together until you get a nice, smooth mix.
03 - Use a big bowl to mix almond flour, salt, baking powder, shredded cheese, garlic powder, and a tiny bit of onion powder.
04 - Pour the cottage cheese mixture into the bowl with the dry stuff. Stir until it all comes together into a dough that feels thick.
05 - Break your dough into 4-6 parts. Roll each piece into a sausage shape, then twist it into a circle. Pop them either onto the baking sheet or into the bagel mold.
06 - Brush the tops with the beaten egg for sheen. Sprinkle sesame seeds, poppy seeds, or Everything Bagel seasoning over the top.
07 - Put your bagels in the oven for 20-25 minutes until they’re nicely golden and feel firm. Let them sit for about 10 minutes once out of the oven before slicing.
08 - These are amazing warm! Pair them with butter, cream cheese, avocado, or anything you like.

01 - Stick with full-fat cottage cheese for a creamier texture.
02 - Blending guarantees smooth dough—otherwise, you might find lumps.
03 - Stop stirring as soon as the dough forms. Overmixing is a no-go.
