Soft Turkish Pide (Print Version)

# Ingredients:

→ Dough

01 - 1 2/3 cups water
02 - 1 teaspoon kosher salt
03 - 1 tablespoon granulated sugar
04 - 1 tablespoon instant yeast
05 - 500 g bread flour or plain flour

→ Egg Wash

06 - 1 teaspoon nigella seeds
07 - 1 teaspoon sesame seeds
08 - 1 tablespoon water
09 - 1 tablespoon yogurt
10 - 1 egg yolk

# Instructions:

01 - Combine the flour, yeast, sugar, and salt in a large mixing bowl. Stir them together thoroughly.
02 - Pour in the water and stir until the mixture becomes a dough. Place the dough in a stand mixer and knead on a medium-high setting for 8-10 minutes until smooth and soft.
03 - Cover the dough bowl with a towel and leave it in a warm spot for about an hour so it can double its size.
04 - Punch the dough lightly to release the air. Move it to a floured surface, cut it into two equal parts, and shape each into a ball. Flatten them into circles with a rolling pin.
05 - Place the dough circles back on the surface, cover with a towel, and let it sit for another 20-30 minutes. Turn on your oven to the highest setting to preheat.
06 - In a small bowl, whisk together yogurt, egg yolk, and water until smooth and well-blended.
07 - Press your fingers around the edges and across the middle of each circle. Brush the egg wash mixture on top and sprinkle with sesame and nigella seeds.
08 - Bake at 225°C (440°F) on the middle oven rack for 15-20 minutes until golden brown. Take it out on time to keep it soft!
09 - Optionally, swipe some olive oil on top of the bread while it's hot and enjoy it with dips or spreads.

# Notes:

01 - Test yeast in warm water first to make sure it's active.
02 - Don't rush the rising—let it fully double.
03 - Flour your surface liberally to avoid sticking.
04 - Bread flour tends to give better stretch and texture.
05 - Always check ingredient expiration dates before baking.
