Combine the flour, yeast, sugar, and salt in a large mixing bowl. Stir them together thoroughly.

Pour in the water and stir until the mixture becomes a dough. Place the dough in a stand mixer and knead on a medium-high setting for 8-10 minutes until smooth and soft.

Cover the dough bowl with a towel and leave it in a warm spot for about an hour so it can double its size.

Punch the dough lightly to release the air. Move it to a floured surface, cut it into two equal parts, and shape each into a ball. Flatten them into circles with a rolling pin.

Place the dough circles back on the surface, cover with a towel, and let it sit for another 20-30 minutes. Turn on your oven to the highest setting to preheat.

In a small bowl, whisk together yogurt, egg yolk, and water until smooth and well-blended.

Press your fingers around the edges and across the middle of each circle. Brush the egg wash mixture on top and sprinkle with sesame and nigella seeds.

Bake at 225°C (440°F) on the middle oven rack for 15-20 minutes until golden brown. Take it out on time to keep it soft!

Optionally, swipe some olive oil on top of the bread while it's hot and enjoy it with dips or spreads.
