Spekulatius Spice Cookies (Print Version)

# Ingredients:

01 - 225g cubed unsalted butter
02 - 100g vanilla sugar
03 - 50g brown sugar
04 - 315g plain flour
05 - 2 tsp of ground cinnamon
06 - 1 tsp baker's ammonia or swap with baking powder
07 - 1/2 tsp cardamom powder
08 - A pinch of nutmeg
09 - 1/4 tsp ground clove spice

# Instructions:

01 - Combine the sugars with the butter until smooth. Stir all the dry stuff together, then mix it all into one dough. Pop it in the fridge for a couple of hours or so.
02 - Turn the oven on to 175°C (350°F). Flatten the dough with a rolling pin, then use molds or cutters to shape your cookies.
03 - Bake for 10-12 minutes, then let them sit and cool before putting them out to enjoy.

# Notes:

01 - To get a crunchier texture, leave them in the oven 1-2 mins longer.
02 - Feel free to play around with the spice amounts to suit your liking.
03 - Keep them fresh by storing in a sealed container.
