Spinach Herb Chicken (Print Version)

01 - 1 lb ground chicken
02 - 1 cup baby spinach, chopped
03 - 1 medium onion, diced
04 - 1/2 cup breadcrumbs or use a gluten-free option
05 - 3 tablespoons olive oil (use 1 at a time)
06 - 1/4 teaspoon ground black pepper
07 - 1/4 cup plain Greek yogurt
08 - 1 tablespoon minced garlic
09 - 1 teaspoon dried oregano
10 - 2 tablespoons fresh dill, chopped fine
11 - 1/2 teaspoon ground cumin
12 - 1/2 teaspoon paprika
13 - 1/2 teaspoon salt
14 - 1 tablespoon fresh lemon juice

# Instructions:

01 - Drizzle 2 tablespoons of olive oil in a big skillet, then turn your stove to medium heat. Toss in the onion and garlic, letting them cook for around 2–3 minutes until they're golden and tender. Add the spinach and let it soften for about a minute. Let this mixture cool for a bit, around 5 minutes.
02 - Grab a bowl and mix together ground chicken, breadcrumbs, the yogurt, lemon juice, dill, oregano, paprika, cumin, salt, and pepper. Stir in the cooled spinach and onion combo, gently folding the mixture until everything's blended.
03 - Take the mixture and create 12 evenly-sized patties. Place them on a plate, cover them, and chill in the fridge for half an hour so they hold together better.
04 - Add the last tablespoon of olive oil to a pan on medium heat. Cook the patties in small batches, about 3–5 minutes per side, until they turn golden and reach 165°F inside.
05 - Serve them right away with some sides you love, like grilled veggies, rice, or a dollop of tzatziki.

01 - Storing Tips: Keep cooked patties in a sealed container in the fridge for up to 3–4 days.
02 - How to Reheat: Use a skillet, microwave, or air fryer to warm them back up.
03 - Freezing: For uncooked patties, wrap each one in plastic wrap, then freeze them. They'll be good for 2 months. Defrost in the fridge overnight when ready to cook.
04 - Air Frying Option: If using an air fryer, set it to 375°F. Let the patties cook for 13–15 minutes and flip them halfway so both sides brown evenly.
