Drizzle 2 tablespoons of olive oil in a big skillet, then turn your stove to medium heat. Toss in the onion and garlic, letting them cook for around 2–3 minutes until they're golden and tender. Add the spinach and let it soften for about a minute. Let this mixture cool for a bit, around 5 minutes.

Grab a bowl and mix together ground chicken, breadcrumbs, the yogurt, lemon juice, dill, oregano, paprika, cumin, salt, and pepper. Stir in the cooled spinach and onion combo, gently folding the mixture until everything's blended.

Take the mixture and create 12 evenly-sized patties. Place them on a plate, cover them, and chill in the fridge for half an hour so they hold together better.

Add the last tablespoon of olive oil to a pan on medium heat. Cook the patties in small batches, about 3–5 minutes per side, until they turn golden and reach 165°F inside.

Serve them right away with some sides you love, like grilled veggies, rice, or a dollop of tzatziki.
