Use a sharp knife to slice the rind off the Brie wheels, then chop them into smaller cubes. Let the pieces sit out until they warm up a bit.

Throw those Brie chunks into a food processor and let it run. Mix it up until it’s super smooth and velvety. Scrape the bowl's edges occasionally if stuff sticks. After it’s ready, scoop it into your serving bowl.

Drizzle honey generously over the whipped Brie, and if you’re feeling fancy, add a piece of honeycomb. Sprinkle with rosemary for a pop of green. Serve the spread with your crackers or toast. Prefer a twist? Swap honey for blueberry jam and replace rosemary with thyme.
