Thai Coconut Grilled Chicken (Print Version)

# Ingredients:

→ Marinade

01 - 1 tbsp oyster sauce
02 - 2 tbsp sugar
03 - 4-5 slices ginger, about 2 tbsp
04 - 2 tbsp soy sauce
05 - 2 tbsp coconut cream
06 - 2 cloves garlic, about 1½ tbsp
07 - 1 tbsp dark soy sauce

→ Chicken

08 - 1 kg chicken (prefer dark meat)

→ Coconut Cream Glaze

09 - 1½ tbsp honey
10 - 6 tbsp coconut cream
11 - 1 tsp soy sauce

→ Peanut Sauce (Optional)

12 - 1 tsp rice vinegar
13 - ¼ cup unsweetened peanut butter
14 - 1 tsp chili oil (optional)
15 - 2 tsp maple syrup or honey
16 - 1 tsp sesame oil (optional)
17 - 2-3 tbsp water (adjust for thickness)
18 - Crushed peanuts (optional topping)
19 - 1 tsp Thai red curry paste
20 - 2 tbsp coconut cream
21 - 2 tsp soy sauce

# Instructions:

01 - Combine honey, soy sauce, and coconut cream in a small bowl. Set aside until it’s time to use.
02 - Chop the ginger and garlic finely or process until smooth. Stir them into the rest of the marinade ingredients in a bowl. Toss the chicken in the mixture and let it sit for at least 1-2 hours or leave overnight in the fridge.
03 - If you’re using wood skewers, soak just the non-sharp end in water so they don’t burn. Take out the chicken 30 minutes before cooking to reach room temperature. Thread the chicken tightly onto skewers to avoid loose bits burning.
04 - Get your grill hot—around 260°C (500°F). Grill the chicken directly over the heat, flipping every few minutes for a total of 15-18 minutes. Spread the glaze on during the last few minutes, flipping once or twice more to caramelize.
05 - Stir everything listed under ‘Peanut Sauce’ in a bowl until smooth. Adjust with water for your preferred thickness. Leave aside till serving.
06 - Serve chicken skewers on a plate with fresh lettuce leaves. Dip into the peanut sauce, or wrap the chicken in the lettuce with sauce for a fun twist.

# Notes:

01 - Dark soy adds a rich color, but you can use light soy if needed.
02 - Want a different meat? Try swapping chicken for pork shoulder.
03 - Brine white meat to keep it from going dry.
04 - For a stronger coconut hit, opt for cream instead of milk.
