Turn your oven to 400°F (200°C) to warm it up, then lightly coat a big baking dish with some olive oil.

Heat some olive oil in a big pan over medium. Toss in the garlic and onion, cooking for 3-4 minutes until the onion looks clear.

Drop the ground turkey into the pan. Crumble it apart with a spoon and cook for 5-7 minutes until it turns brown. If there’s too much fat in the pan, pour it out.

Mix in the diced zucchinis, sweet potatoes, salt, pepper, smoked paprika, and Italian seasoning. Keep cooking another 5-7 minutes so the veggies begin to soften.

Spoon the turkey and veggie mixture into your greased baking dish, spreading it out evenly.

Scatter shredded cheese all over the top.

Put the dish in the hot oven for 25-30 minutes. It’s ready when the cheese gets bubbly and golden, and the sweet potatoes are tender.

Take it out of the oven and let it rest for a couple of minutes. Add some fresh parsley on top if it suits you.
