Turkey Sweet Potato Dinner (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 2 medium zucchinis, diced
03 - 2 medium sweet potatoes, peeled and diced
04 - 1 medium onion, diced
05 - 1 pound ground turkey
06 - 2 cloves garlic, minced
07 - 1 teaspoon Italian seasoning
08 - 1 teaspoon smoked paprika
09 - Salt and pepper, as you like
10 - 1 cup shredded cheese (cheddar or mozzarella)
11 - Fresh parsley, finely chopped (optional)

# Instructions:

01 - Turn your oven to 400°F (200°C) to warm it up, then lightly coat a big baking dish with some olive oil.
02 - Heat some olive oil in a big pan over medium. Toss in the garlic and onion, cooking for 3-4 minutes until the onion looks clear.
03 - Drop the ground turkey into the pan. Crumble it apart with a spoon and cook for 5-7 minutes until it turns brown. If there’s too much fat in the pan, pour it out.
04 - Mix in the diced zucchinis, sweet potatoes, salt, pepper, smoked paprika, and Italian seasoning. Keep cooking another 5-7 minutes so the veggies begin to soften.
05 - Spoon the turkey and veggie mixture into your greased baking dish, spreading it out evenly.
06 - Scatter shredded cheese all over the top.
07 - Put the dish in the hot oven for 25-30 minutes. It’s ready when the cheese gets bubbly and golden, and the sweet potatoes are tender.
08 - Take it out of the oven and let it rest for a couple of minutes. Add some fresh parsley on top if it suits you.
